The Healthier Biscuit
I decided to experiment today on a biscuit with lots of herbs and spices, along with seeds.....
and the result was ..... a yummy healthy option of biscuit
175g spelt flour
1tsp bicarbonate of soda
1tsp vanilla extract
1dessert spoon linseeds
1tbsp pumpkin seeds
1tbsp sunflower seeds
1tbsp flax seed
1level dessert spoon cinnamon
contents of 1 Yogi liquorice t-bag
contents of 1 Yogi Women's Energy t-bag
75g dried cranberries
35g organic coconut oil
35g cashew butter
100g soft brown sugar
pre heat oven to 150c / gas mark 2
line sufficient baking trays with baking parchment
cream the sugar with the coconut oil, cashew butter and butter in a large bowl,
in another bowl add the bicarb to the flour and set aside,
add all the other dry ingredients and vanilla extract to the sugar/butter mixture.
then add the flour and combine thoroughly.
Add the milk and knead to a dough........it will be quite crumbly so don't worry!
On a floured surface carefully roll out and use a cutter (I like square ones because they are easier to store!!!)
put on the baking trays, they don't spread so they can be close together.
Bake for approx 20 minutes .... ovens vary!
Allow to cool on a wire rack, then store in an airtight container.
