A healthier alternative to fried rice.
1 red pepper
1 green pepper
2 small onions
3 garlic cloves
2 beef tomatoes
extra virgin olive oil
Put the cauliflower, onions and garlic in a food processor until it resembles rice
finely chop peppers, courgette and tomatoes.
fry peppers, and courgette for 5 mins on high, add cauliflower, onions and garlic and fry for another 10 mins
add tomatoes and fry for a further 5 mins
add spices to taste...I added salt, black pepper, chinese 5 spices, smoked paprika and smoked garlic powder
serve with meat of choice .....I added chicken breast cut into small pieces and fried for 10 mins before adding to cauliflower mixture.
