normally flapjacks consist of 4 main ingredients, oats, butter, sugar and golden syrup..... this version uses honey as the sweetener and is much healthier
100g coconut oil
50g mixed seeds
75g mixed dried fruit ( I used cranberries, goji berries and sultanas)
pre heat oven to 175f and grease or line a baking tray
In a large saucepan bring the coconut oil and the honey to the boil.... remove from heat, add remaining ingredients and mix well. Pour the mixture into the prepared baking tray and flatten down with a metal spoon, press quite hard and make the top smooth.
Bake for 20 - 25 minutes till golden brown. Leave to cool in the tray, once it has cooled remove and cut into squares.
