◾6 large eggs, boiled and cooled
◾1/4 cup hummus
◾2 tablespoons olive oil
◾1/8 teaspoon pepper
◾ dash salt
Split cooked, boiled eggs lengthwise. Carefully remove the yolk and put the yolk in a small mixing bowl.
In a second mixing bowl, combine the egg yolk, hummus, olive oil, pepper, and salt. (You can omit the salt if desired.) Mix thoroughly.
Carefully spoon the hummus mixture into each egg half. Refrigerate until serving time.
