10 Eggs (I used organic)
1 Small Red Onion- diced
10 oz. frozen or fresh Spinach (fresh needs to be sauteed for 1-2 minutes- both needs to be drained removing most of water)
1 cup of low-fat shredded cheese blend- mozzarella/cheddar
Splash of Milk (can use coconut, almond or rice)
1/2 teaspoon garlic powder
Sea alt and to taste
Mix each ingredient into bowl, mixing well pour into lightly olive oiled Glass Casserole dish.
Bake at 350 for 45 minutes. Move to cooling rack let completely cool cut in to squares.
