2 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 cup apple sauce (no sugar added)
1/3 cup sugar
3 egg whites
4 very ripe bananas, peeled
1 tsp vanilla extract
1/2 cup walnut pieces, optional
Preheat oven to 350°F/180°C.
Grease 2 loaf pans with non-stick cooking spray or butter.
In a small mixing bowl, combine flour, baking powder, baking soda and cinnamon and set aside.
In a larger bowl using a mixer, mash the bananas. Add the apple sauce, sugar, egg whites, vanilla and optional walnuts. Mix until blended.
Add flour mixture all at once to banana mixture and stir gently to blend.
Pour batter into prepared loaf pans and bake for 45-50 minutes or until a knife inserted in the center comes out clean.
Remove from loaves and cool completely before slicing.
